Grand Marnier Oatmeal Cookies

These are from a recipe from Baking Bites, I substituted the spices for Grand Marnier and also added some chocolate . I couldn't really taste the liqueur unfortunately and there definately could have been more chocolate too. However, the texture was brilliant; chewy inside with slightly crisp edges . I cooked them for 12-13 minutes which was just right for how I like my cookies, if you like them firmer then extend that to about 15-16 minutes. The recipe is in cups which is annoying for a British girl! (I never have understood why they measure butter in cups!) But really is very good.

Grand Marnier Oatmeal Raisin Cookies

3/4 cup unsalted butter, at room temperature
1 cup packed brown sugar
1/2 cup sugar
2 large eggs
1/2 tsp vanilla extract
2 cups plain flour
1/2 teaspoon salt
1 1/2 teaspoons baking soda
3 tsp Grand Marnier (or rum)
1 1/2 cups quick cooking rolled oats (not instant)
1 cup raisins
1/2 cup chocolate chips

Preheat oven to 180C and line a baking sheet with parchment paper.
In a large mixing bowl, cream together butter and sugars until light and fluffy. Beat in eggs, adding them in one at a time until well incorporated, followed by vanilla extract and liqueur.
In a medium bowl, mix together flour, baking soda and salt. Stir in the flour mixture to the butter mixture. Stir in the oats, chocolate and raisins.
Drop the dough by heaping teaspoons onto prepared baking sheet, leaving about 2 inches between cookies to account for spread.
Bake for 12-15 minutes, until cookies are a light gold color and look set.
Cool on a wire rack.

This made 39 medium sized cookies
