I couldn't really taste the liqueur unfortunately and there definately could have been more chocolate too. However, the texture was brilliant; chewy inside with slightly crisp edges . I cooked them for 12-13 minutes which was just right for how I like my cookies, if you like them firmer then extend that to about 15-16 minutes. The recipe is in cups which is annoying for a British girl! (I never have understood why they measure butter in <span style="font-style: italic;">cups</span>!) But really is very good.</a><br /><strong><br />Grand Marnier Oatmeal Raisin Cookies </strong><br />3/4 cup unsalted butter, at room temperature<br />1 cup packed brown sugar<br />1/2 cup sugar<br />2 large eggs<br />1/2 tsp vanilla extract<br />2 cups plain flour<br />1/2 teaspoon salt<br />1 1/2 teaspoons baking soda<br />3 tsp Grand Marnier (or rum)<br />1 1/2 cups quick cooking rolled oats (not instant)<br />1 cup raisins<br />1/2 cup chocolate chips<br /><p>Preheat oven to 180C and line a baking sheet with parchment paper.<br />In a large mixing bowl, cream together butter and sugars until light and fluffy. Beat in eggs, adding them in one at a time until well incorporated, followed by vanilla extract and liqueur.<br />In a medium bowl, mix together flour, baking soda and salt. Stir in the flour mixture to the butter mixture. Stir in the oats, chocolate and raisins.<br />Drop the dough by heaping teaspoons onto prepared baking sheet, leaving about 2 inches between cookies to account for spread.<br />Bake for 12-15 minutes, until cookies are a light gold color and look set.<br />Cool on a wire rack.</p> <p>This made 39 medium sized cookies<br /></p>Unknownnoreply@blogger.com0
